The combination of Blue Chair Bay Rums VERY recent product launch and Kenny Chesney performing a stadium concert in my home town this past weekend, I was prompted to pickup a bottle of the intriguing sounding Coconut Spiced Rum for a little cocktail mixing.
As with most rums new to me, I quickly investigated cocktails recommended from the spirit’s home page. With a three product rum line (White, Coconut, Coconut Spiced), Blue Chair Bay has a mixture of recommended cocktail recipes for users to try.
They have typical cocktails like rum & coke (or ‘diet’ as Kenny recommends) and rum & Redbull recipes, but you will also find a number of fresh fruit cocktail like the ‘Pile Up‘ and the ‘Sailor’s Soul‘. Both of these cocktails creatively combine sweet and citrus with the unique flavors from Blue Chair Bay Coconut Spiced.
RASPBERRIES MAKE IT ROCK.
The ‘Pile Up’ is a tasty punch cocktail made with fresh raspberries, lime juice and ginger ale. I wish I had used a strong ginger beer with this recipe to enhance the spice within the rum.
2 oz. Blue Chair Bay Coconut Rum
5 raspberries
1/2 oz. fresh lime juice
splash of simple syrup
splash of ginger ale
Shake all ingredients (except for ice) in a cocktail shaker with ice. Strain over ice into a rocks glass. Top off with the ginger ale.
Garnish: A lime wheel and raspberries. What else?
THE SEA MEETS THE SPICE.
The Sailor’s Soul is a very light, summertime cocktail that would have been better suited for a champagne flute. The strawberry gets hidden behind the rum and the lemon juice in this drink so I recommend using 2-3 strawberries instead of the prescribed 1 berry.
1 1/2 oz. Blue Chair Bay Coconut Spiced Rum
1 strawberry, cut and muddled
1 lemon wedge
1 tsp. agave nectar
2 dashes angostura bitters
Muddle the strawberry and lemon wedge in the agave. Add Blue Chair Bay Coconut Spiced Rum, bitters, and ice. Shake like crazy. Strain over ice into a rocks glass. Add a strawberry slice and lemon wheel.
