What are “Uncharted Rums”? These are rums I have not yet had the pleasure of reviewing. This is my way to highlight and promote great rums from around the world that might be unfamiliar to most rum shoppers. So until I am able to review each of these rums they shall remain “Uncharted” to me.
Today’s Uncharted Rum comes from the Southeast Mexican town of Tapachula, near the Guatemalan border. Izapa Mayan Premium Rums have won several medals at the world’s most prestigious rum festivals including two ‘Best In Class’ at the 2013 Miami Rum Renaissance Festival.
A little history of the distillery:

Made in the best rum latitude, 15° North, for over 65 years, it is recognized among the most outstanding rums of the world. Well aged and extremely well blended, Izapa Black Rum, recognized internationally as the best Mexican rum in the world, offers captivating color, aromas and flavor. It opens with a sweet and rich oak flavor, notes of smooth vanilla cream and dried fruits. Opulent, silky, mellow finish that moves the senses to repeat the experience and be transported to the joy of the tropical warmth. It is extremely appetizing and elegant.
Cocoa from Chiapas, winner of several competitions, is added to this prestigious rum even before its aging, resulting in an exquisite flavor hence its international gold awards. It is a unique expression exhibiting the bold aroma of soft, milk chocolate featuring a full-bodied warm palate of light cocoa, dried nuts and vanilla leading to a warm long lingering finish, that everybody loves.
This fine expression of deep rich amber rum, offers aromas of charred Oak barrels, earth and leather. On the palate, a smooth, creamy entry fades to dried fruits and nuts with a slightly vegetal, bitter finish.
It identifies itself with the sharp, contemporary personality of the social and creative youth of today. It is fresh, clear and light; firm and smooth on the palate. Its versatile virtue is exceptionally highlighted making it ideal for the happy union with other ingredients that cocktails call for.
Pleasant coconut notes on top of sugar cane give this spirit a nice bouquet, fresh and well balanced with a mellow white rum base. Taste it on a Piña Colada. Not sweet yet it adds tropical tones to any cocktail or punch.
Crystalline, remarkably aromatic. Provides great sensory pleasure. Delicious sugar cane and coconut flavor. Its sensual profile evokes the tropical delight. Fresh and intense.
PLATINUM AGED.- An outstanding white rum, light, crisp, aged three years in American Oak, it opens with a delicately mild fruity nose suggesting its cane origin. The palate features toasted grains, oak, and a hint of smoke. Full-bodied, notably warm and smooth finish, adds richness to cocktails.
